If you’re looking for quick and easy way to cook up a big piece of fish, however, Stafford suggests you grab your cast iron skillet and set it on the grill as it heats up. Once the grill’s temperature climbs, the skillet will get super hot. Add a little oil, then carefully lower the fish fillet into the skillet and close the lid. Set a timer for three minutes, then open it back up. The fish will be perfectly seared, giving it a nice crust on the bottom, and it should release from the pan with a slight nudge from your spatula. You’ll get the smoky flavor of grill cooking without any dangerous flareups or sticking. You won’t get those glorious grill marks on your fish, but that’s just for visual effect anyway. Also, if you’re using a gas grill, you won’t really get any smoky flavor, unless you use some smoking chips. Otherwise, this method is pretty simple and effective.
